Ingredients
1 pound fresh mushrooms, sliced
1 large onion, chopped
2 garlic cloves, minced
½ cup butter
1 large green pepper, chopped
10 eggs
4 cups (1 pound) Monterey Jack cheese, shredded
16 ounces small-curd cottage cheese
½ cup flour
1 teaspoon baking powder
¾ teaspoon salt
¾ teaspoon dried basil
¾ teaspoon ground nutmeg
Snipped chives, optional
Directions
In large skillet sauté mushrooms, onion and garlic in butter until tender. Add green pepper and sauté 1 minute longer. Remove from heat; drain. In a large bowl beat eggs; stir in cheeses, flour, baking powder, salt, basil and nutmeg. Add mushroom mixture. Pour into a greased or sprayed 15-x10-x1-inch pan . Bake, uncovered, 30 to 35 minutes or until edges are golden and knife inserted near center comes out clean. Let stand 15 minutes. Serve warm, garnished with fresh chives if desired.
